Will Hawes

After falling in love with Agave over 10 years ago in the Green and Red, Will now looks after Meteoro & Marca Negra Mezcal for 10 Degrees C.

A former Bar manager of the impeccable Milk & Honey in London, William also learnt his trade with stints at the Booking Office and more recently the Zetter Townhouse, a far cry from the dive bars and clubs in his hometown of Northampton. William headed up the service team at Tony Conigliaro’s esteemed “The Bar With No Name at 69 Colebrooke Row” & looked after Soho’s late night Agave bar El Camion.
