The festival celebrates both traditional and contemporary Mexico.  It is a true journey across the country, a one-off opportunity to sample the finest agave spirits and meet distillers and creators behind one of the most up-and-coming spirit categories.

Raicilla Jarena

Centuries ago, in the remote landscapes of Mascota, a small town in Jalisco, Mexico, a distilled spirit made from agave was born, embodying the very essence of the land: “La Raicilla“.This ancestral elixir, passed down from generation to generation, has its roots in an ancient tradition that dates to time immemorial. La Raicilla is more than just a beverage; it is the distillation of an ancestral tradition and a reflection of our passion for preserving our roots. We cultivate and harvest the agave maximiliana, a wild and resilient species that grows in the rugged and steep lands of Mascota. These plants, nourished by the generosity of the soil and the intensity of the sun, develop an unmatched richness of flavors and aromas. Our production process follows traditional methods that have been passed down from generation to generation. Each agave plant is carefully hand-selected by expert jimadors, who with their experience and skill extract the heart of the plant, known as the “piña.” These piñas are cooked in traditional stone ovens and then crushed with mallets in a wooden vat, extracted from the earth itself, allowing us to obtain a rich and sweet must. Next, the must naturally ferments in large wooden vats, using the native yeasts present in the plant without the use of additional yeast. This slow and natural fermentation process brings a unique complexity to our Raicilla.Once fermentation is complete, we proceed to distill the must in copper stills, employing centuries-old techniques to ensure purity and excellence in every drop. The result is a smooth and alluring distilled spirit with a unique personality. Each sip of “Jareña”reveals notes of roasted agave, fresh citrus, and a subtle touch of spices. It is the perfect balance between tradition and modernity, between the past and the present. Our goal is to share the unique experience of Raicillawith the world. We want each bottle of “Jareña”to be an invitation to explore the richness and diversity of Mexico. From the vibrant streets of Guadalajara to the mysterious landscapes of Mascota, every drop of “Jareña”captures the essence of our beautiful country.
